雲朵焦糖莓果披薩
【餅皮材料】
高筋麵粉 120g
鹽 2g
糖 5g
乾酵母 3g
橄欖油 1大匙
溫水 75c.c.
【配料】
起司絲 30g
藍莓 適量
棉花糖 適量
薄荷葉 2片
【醬汁】
奶油 30g
蜂蜜 30g
糖 50g
鹽 1大匙
鮮奶油 90c.c.

【作法】
1. 準備一個大調理盆放入麵粉,將乾酵母先加少許的水調開後倒入麵粉中,並加入鹽與糖。慢慢分次倒入30-40˚C左右的溫水,將麵粉搓揉成團。

2. 接著加入橄欖油,揉至麵團表面成光滑狀態後,把麵團往底部收攏。

3. 將揉好的麵團放置到玻璃碗內,蓋上保鮮膜靜置40分鐘使其發酵。待麵團發酵膨脹到原本的一倍大後取出。

4. 在檯面撒上手粉後放上麵團,再均勻撒上手粉,拿起麵團用手拉開後,再用手指撐開麵皮。

5. 用叉子在麵皮上搓洞後,放入預熱好的烤箱,以220˚C烤8-10分鐘至金黃上色,即製作成披薩皮。

6. 將奶油、蜂蜜、糖、鹽入鍋煮成焦糖色,再放入鮮奶油拌勻,即完成醬汁。

7. 在披薩皮上先塗抹醬汁,再撒上起司絲、棉花糖、藍莓,放入烤箱回烤5分鐘,最後以薄荷葉裝飾即完成。
